As the golf season gets rolling we have a new feature day in the Valley Grill: Monday Night Family Night! We are roasting whole chickens in our space-age oven, making for a delicious family feast.
Planning for this event starts on Friday, when we get in fresh whole birds and brine them overnight! Then we air dry them for two days so the skin gets paper thin.
The oven does the rest, slowly cooking while pumping the birds with steam, then cranking heat to 600 degrees to crisp up and put the final brush strokes of golden brown on this miraculous roast chicken.
One other thing that happens, which I think is a great idea, is that we roast potato wedges under these birds, so the potato soaks up the roast chicken flavor.
There is a good argument to be made that the potato is as good as or better than the chicken. We serve this carved and family style with coleslaw, macaroni salad, warm rolls and gravy.
